Ingredients
  

  • 1/2 cup spinach
  • 1 cup quinoa cooked
  • 4 Italian garlic sausage I love the ones from Costco! You can also substitute for ground beef, ground turkey or spicy Italian sausage
  • 1 can corn
  • 4 tbsp medium spice salsa
  • 1 to mato
  • 1/2 Cucumber
  • 2 tbsp feta cheese
  • 1/4 red onion
  • 1 avocado
  • Spoonful of Greek yogurt or sour Cream
  • Side of tortilla chips

Instructions
 

  • Cook sausage on a frying pan
  • Cook quinoa in a pot - 1 cup quinoa to 1.5 cups of water (bring to a boil and simmer for 15 minutes)
  • Prepare your salad bowl by layering spinach, quinoa, sausage and all the other toppings.

Notes

Can garnish with green onions
