Matcha White Chocolate Coconut Cookies

- 2 cups flour
- 1 tbsp matcha powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup packed brown sugar
- ¾ cup unsalted butter melted
- ½ cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 egg yolk
- 1 ½ cups roughly chopped white chocolate or white chocolate chips
- ½ cup shredded coconut
- ½ cut chopped walnuts
Preheat oven to 325 degrees F.
Sift flour, matcha powder, baking soda and salt together.
Beat butter, brown sugar and white sugar together. Continue to beat and add in vanilla extract, egg and egg yolk until fully combined.
Add dry ingredients to your wet ingredients.
Gently mix in white chocolate chips, coconut and walnuts.
Place cookie sized scoops onto your baking pan.
Bake for 8 - 10 minutes, until lightly browned.
