Matcha Mochi Brownie

This chewy matcha coconut mochi brownie is so easy to make.

Equipment

  • 8" x 8" square baking pan
  • Parchment paper

Ingredients
  

  • 1 cup glutinous rice flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • 1 egg
  • 1 cup canned coconut milk Can substitute with whole milk
  • 1 tablespoon matcha powder
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F.
  • Whisk together the glutionous rice flour, sugar, baking powder, and salt. Sift in matcha powder so it removes all the lumps.
  • Whisk together the egg and coconut milk.
  • Combine the wet and dry ingredients until there are no lumps.
  • Pour the batter into the prepared pan.
  • Bake at 350°F for 40-50 minutes, or until a toothpick inserted comes out clean. Enjoy!
