Matcha Mochi Brownie

- 1 cup glutinous rice flour
- ½ cup sugar
- 1 teaspoon baking powder
- 1 egg
- 1 cup canned coconut milk Can substitute with whole milk
- 1 tablespoon matcha powder
- 1/4 tsp salt
Preheat oven to 350°F.
Whisk together the glutionous rice flour, sugar, baking powder, and salt. Sift in matcha powder so it removes all the lumps.
Whisk together the egg and coconut milk.
Combine the wet and dry ingredients until there are no lumps.
Pour the batter into the prepared pan.
Bake at 350°F for 40-50 minutes, or until a toothpick inserted comes out clean. Enjoy!
