Taco Salad Bowl
Tacos are amazing, but here is a healthier version in a taco salad. I have been trying to have low carbs for the past few weeks, and these recipe fits my dietary needs and also tastes delicious. I find the salad so refreshing on a hot summer day.
You can get amazing taco flavours on a bed of fresh spinach. If you really want some crunch, I like to add a few tortilla chips on the side.
Depending on your spice tolerance, you can opt for a super spicy salsa, or something more on the sweet side. Personally I love using the Neal Brothers Salsa (the sweet heat one is my faviourite). If you want to see a review of the Neal Brothers Salsa, check out my other blog post here.
I love to throw together these types of meals with whatever I have left over in my fridge. You can use other types of greens or veggies and season them with taco seasoning.
I happened to have leftover greek salad in my fridge, so I decided to add that to the taco bowl, and it turned out so well! The flavours complemented each other so nicely. I love fresh tomatoes. I find that the tomatoes on the vine are the sweetest in comparison to other types of tomatoes.
I like to use a Greek yogurt instead of sour cream. It basically has the same taste, but is healthier for you. I also use Greek yogurt to make delicious dips. You have to get the non-flavoured one. Again, I get the large packs from Costco, and I can never go wrong with that.
If you want to add in more fats, you can add a topping of cheddar cheese. I used feta in this recipe, as it was already apart of my Greek salad.

Taco Salad Bowl
- 1/2 cup spinach
- 1 cup quinoa cooked
- 4 Italian garlic sausage I love the ones from Costco! You can also substitute for ground beef, ground turkey or spicy Italian sausage
- 1 can corn
- 4 tbsp medium spice salsa
- 1 to mato
- 1/2 Cucumber
- 2 tbsp feta cheese
- 1/4 red onion
- 1 avocado
- Spoonful of Greek yogurt or sour Cream
- Side of tortilla chips
- Cook sausage on a frying pan
- Cook quinoa in a pot - 1 cup quinoa to 1.5 cups of water (bring to a boil and simmer for 15 minutes)
- Prepare your salad bowl by layering spinach, quinoa, sausage and all the other toppings.
