Matcha Coconut Cookies
Our story
Matcha is so delicious. I love as a latte, or as a cake or cookie. Matcha doesn’t have a super strong taste, but it is so good! Sometimes it can be a bit on the bitter side, so you have to ensure you are adding the right amount.
This matcha cookie recipe is absolutely perfect. It makes enough cookies that they won’t all be gone within a day. It has a wonderful matcha flavour that isn’t bitter. The white chocolate offsets the bitterness.
With the added coconut, it gives the cookie some texture, and makes it a bit more chewy. I love adding coconut to all my cookies. If everyone in your family is not the biggest fan of coconut, you can split the batter into 2 bowls, and only mix in the coconut into half the batter. This gives you a variety of cookies with the same amount of effort!
To get the nice crunch, I added some walnuts. You can even toast your walnuts before adding them to your cookies to give them a nice roasted flavour. This is optional! You can also substitute for other types of nuts, such as some crushed pistachios or crushed pine nuts.
I use culinary grade matcha powder. You can purchase this from your local asian grocery store. You want to ensure you are getting a high quality matcha powder for recipes. You do not want to be using green tea leaves, as those will not be good in a cookie.
I place the cookies quite close to each other so I can fit more onto the tray. I would rather have smaller cookies (about 1 tbsp per cookie), instead of larger cookies. Honestly, it just makes me feel better that I can eat 2-3 cookies and not feel bad about it! They are the perfect snack sized cookie. They don’t expand that much in the oven, so it is safe to put them a bit closer together.

Matcha White Chocolate Coconut Cookies
Equipment
- Bowl
- Cookie sheet pan
Ingredients
- 2 cups flour
- 1 tbsp matcha powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup packed brown sugar
- ¾ cup unsalted butter melted
- ½ cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 egg yolk
- 1 ½ cups roughly chopped white chocolate or white chocolate chips
- ½ cup shredded coconut
- ½ cut chopped walnuts
Instructions
- Preheat oven to 325 degrees F.
- Sift flour, matcha powder, baking soda and salt together.
- Beat butter, brown sugar and white sugar together. Continue to beat and add in vanilla extract, egg and egg yolk until fully combined.
- Add dry ingredients to your wet ingredients.
- Gently mix in white chocolate chips, coconut and walnuts.
- Place cookie sized scoops onto your baking pan.
- Bake for 8 - 10 minutes, until lightly browned.
