Oatmeal Chocolate Chip Cookies
Our story
Chocolate chip oatmeal cookies are the easiest thing to bake, and everyone always loves them. This recipe has been made in my family for years, and it brings back so many childhood memories.
They turn out soft but chewy with the perfect amount of coconut and chocolate. I also love to add in some chopped walnuts to give it an extra crunch. If you don’t like coconut, or are allergic, you can substitute with just rolled oats. There are so many option of additional mixes you can make. Depending on what I have on hand, sometimes I will add some raisins, white chocolate or cranberries. if you want some of each, you can divide your batter and mix these in separately to get a different mix of cookies! So much more variety with minimal amounts of effort.
I like to get the rogers rolled oats (they are full oats) and you can buy them in bulk from Costco! They are perfect for baking, or making overnight oats. Oats are so versatile, and you can make so many different snacks with them.
If you bake these for 3-4 minutes longer, they the cookies will turn out more crisp and crunchy, it that is what you prefer. I usually make a batch of soft and chewy and a batch of crunchy so that everyone in my household gets exactly what they love!

Oatmeal Chocolate Chip Cookies

Ingredients
- 1 cup margarine You can use ~1-2 tbsp less so it's not as greasy
- ½ cup Brown sugar
- ½ cup White sugar
- 1 Egg
- 1 tsp Vanilla
- 1 cup Flour
- ½ tsp Salt
- 1 tsp Baking soda
- 2 ½ cup Rolled oats - OR 1 cup coconut and 1 ½ cup rolled oats
Instructions
- Cream margarine, brown sugar and white sugar together.
- Beat in egg and vanilla.
- Combine flour, salt, baking soda, rolled oats and coconut.
- Mix everything together.
- Roll into balls
- press down with a fork on a buttered cookie sheet (or on parchment paper).
- Bake at 350 F for 12 minutes until golden brown.
