Our story

This recipe was created out of love for ube! I have recently been obsessed with anything ube flavoured. You may be wondering what ube is. It is a purple yam. Now that may sound odd to bake with yam flavoured items, but trust me, these are delicious! 

Ube has a sweet nutty flavour and a deep purple colour. When these ube crinkle cookies are rolled in the powdered sugar, it gives them such a beautiful look. Be warned, that if you are rolling these by hand, you may end up with a slight purple tinge to your skin.

I usually purchase a large jar of ube jam, also known as ube halaya. I can find the jam at my local asian grocery stores for about $3.50 CAD. Since this recipe doesn’t use up a whole jar of ube halaya, I have tried out many other ube flavoured items. Check out the other recipes on my blog if you have some extra ube halaya left over! I’ve used ube halaya in ube macarons and ube cheesecake brownies. Those are a must try if you love ube flavoured desserts.

If you don’t have a local asian grocery store near you, you can purchase the ube ingredients from amazon. I like to get the ube extract, like the McCormick one or the Butterfly branded Ube extract. You can also buy the ube jam online, and it can be used in many different recipes. 

I really like using the half sheet USA pans. Specifically the brand USA pans. I have so much bakeware from this brand and it really makes a difference when baking. My items always come out more evenly cooked, and I never have any issues with the bottoms burning. I would highly suggest investing in some good bakeware! This pan makes the perfect texture, and golden brown bottoms without burning. I have tested the USA Pans vs other cheaper baking pans and just trust me, invest in a good pan! Another good option is the Fat Daddio pans

Ube Crinkle Cookies

These ube crinkle cookies look as good as they taste!

Ingredients
  

  • 1 1/2 cups All Purpose Flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup salted butter softened
  • 1/4 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup ube Jam
  • 2 tsp ube extract McCormick
  • 1 cup powdered sugar

Instructions
 

  • Mix together flour, baking powder and salt.
  • Cream the butter and sugars together.
  • Add the egg and beat until light and fluffy.
  • Mix in the ube jam and use extract. Beat until well combined.
  • Gradually add in the flour mixture and mix well.
  • Cover and refrigerate for at least 4 hours. You can also chill overnight.
  • Preheat the oven to 350F.
  • Roll the chilled dough into small balls and then roll in powdered sugar.
  • Bake for 13-15 minutes.
